6 Pink Lady or Cortland apples, with or without skin
¼ cup apple or grape juice
Cinnamon to taste (don’t overdo it… been there done that! You want just enough to enhance the flavor but not to take over.)
1 large box fresh or 16 oz. frozen strawberries, sliced
16 oz. fresh or frozen blueberries
Crushed walnuts or pecans
Preheat oven to 375°F. Slice apples. Place in an oven-to-table dish. Add fruit juice and sprinkle lightly with cinnamon. Bake uncovered for 1 hour. Apples will wilt and shrink.
Remove pan from oven. Layer strawberries on top of apples, then scatter blueberries on top of strawberries. Return to oven and bake for 30-40 minutes.
