Pure Pudding with Apple Muffin and Coconut

Pure Pudding


1/3 cup frozen blueberries
1/4 cup frozen cherries
1/4-1/3 ripe avocado
1/3-1/2 cup “califia farms” unsweetened coconut almond milk
Optional whey or egg white protein powder ( if using you will need 1/2 c milk)
Optional cinnamon to taste

Blend all ingredients in a Nutri bullet or blender of choice until thick and creamy. If the mixture does not fully blend do not add more liquid rather mix with a spoon and then re blend.

Remove from mixer and pour “pure pudding” into a bowl. Top with additional frozen fruit nut or coconut flakes and enjoy!
For sweeter options replace cherries with frozen banana or mango or add stevia to taste.

Apple Muffins


4 eggs separated
1/2 cup apple sauce
1/2 cup apple butter
3/4 c almond butter
1 tsp vanilla extract
1 cup almond flour
1/4 c coconut flour
1 tsp baking soda
1/2 tsp cinnamon

Stiffen whites then add yolks almond butter apple sauce and butter vanilla and mix. In a separable combine dry ingredients and add to wet ingredients. Mix until smooth line 12 muffin tins with palisades parchment paper liners divide batter evenly amongst them. Optionally crush 1/2 cup apple chips and 1/4 slivered almonds or crushed pecans and top muffins. bake at 350 for 20 to 22 minutes.
Allow to cool on a cooling rack.

For blueberry muffins: fold in ⅓ cup fresh or frozen blueberries to the batter before pouring into muffin cups.
For those who are not sensitive to cashews, cashew butter may be used in place almond butter to add a bit more sweetness.

Coconut butter is NOT the same as coconut oil! It is creamy, naturally sweet and sooooo delicious, with the same health benefits as coconut oil. It is super filling and maintains stable blood sugar. Coconut butter can be found near the peanut and almond butters in most health food stores. When a jar of coconut butter is new, the oil will separate to the top. Simply keep the jar near a warm place, or put in a microwave for 20 seconds and mix by hand. For best results, remove the warmed butter and oil from the jar and mix in a blender or NutriBullet until smooth. Return to jar and store at room temperature. It will stay well-mixed for a long time.
