Chocolate or Carob-Cinnamon Pure Pudding

In my book, breakfast is non-negotiable! This is my absolute favorite breakfast – sweet, light, creamy and so filling. This delicious pudding is made with avocado, a superfood that’s loaded with nutrients and healthy fat to keep you full. The natural sugar in the apple butter is balanced by the healthy fats in the recipe. If you like dark chocolate, you’ll love the chocolate version; if you don’t, try my favorite, the carob-cinnamon version. I enjoy my apple carob pudding topped with berries, coconut flakes and some crushed nuts as a Shabbos morning treat almost every week.
For a complete Macro Meal, include the protein powder. If it doesn’t call your name for breakfast, you can even try it as a midday snack! This recipe stays fresh for 3-4 days in the fridge and is super-portable – two pluses that keep it at the top of my Shabbos and yom tov checklist.

Ingredients

  • 3 oz. very ripe avocado
  • ⅓ cup unsweetened almond milk (Califia Farms is my pick outside Pesach)
  • ¼ cup apple butter (for those with a Full ‘N Free palate, 1-2 Tbsp. apple butter is sweet enough)
  • 1 tbsp. unsweetened cocoa

Optional: 2 scoops protein powder of choice (not on Pesach)

Apple Carob Variation

In place of cocoa, add 1-1 ½ tbsp. of carob powder and ½ tsp. cinnamon.

Directions

Blend all ingredients using a blender or Nutribullet. To serve, top with coconut flakes or spoon over a bowl of fresh or frozen (and slightly thawed) berries or cherries. This recipe can be made in advance and can be stored in the fridge for up to 3 days. If it is not sweet enough for you (or your kids), add honey or stevia to taste.

Full ‘N Free tip!

For a soft serve texture, chunk ripe avocados and freeze them. Follow instructions above using frozen avocado. You may need to add 1-2 extra Tbsp. milk. To bulk up the volume (and fiber), add a few frozen cauliflower florets before blending. Yes, I wrote cauliflower. Trust me on this one – it adds volume and great texture without changing the taste.
