Mockoroni

You’ll be surprised at how “real” it feels!

Yield: 4 servings

Ingredients

  • 1 head fresh cauliflower
  • Olive or avocado oil
  • Garlic salt, to taste
  • 1 cup cheddar cheese

Directions

Soak, wash, and check cauliflower. Chop into small, half-inch chunks that resemble macaroni. Generously spray cauliflower with olive or avocado oil or toss with 1-2 tbsp. of oil to coat. Season with garlic salt to taste.

Bake covered at 375°F for 45-55 minutes. Uncover. Add cheddar cheese and mix, then bake uncovered for an additional 10 minutes or until cheese is melted. Yum!
