Pure Pudding

Ingredients:

  • ⅓ avocado
  • ¼ frozen banana*
  • 3 strawberries, sliced
  • ⅔ cup frozen blueberries, divided
  • ½ cup Califia Farms Coconut Almondmilk Blend (OU certified)
  • 1-2 scoops protein powder of your choice, optional
  • Nuts or coconut flakes, optional, for garnish
*For a cherry variation, replace the banana with ¼ cup frozen cherries.
Don’t be scared off by the avocado. It adds delicious creaminess, and the other fruits completely mask the avocado flavor.

Directions:

Place avocado, banana, strawberries, ⅓ cup blueberries and Coconut Almondmilk in a NutriBullet900 or blender of choice. Blend until smooth. If the pudding is too chunky and thick, slowly add additional milk by the tablespoon and blend until you have reached the desired consistency. (This is meant to be a thick, rich pudding, not a smoothie.) Top with remaining frozen blueberries, coconut flakes and nuts.
