Shaping Options

Dough can be shaped in one of the options below, or mix and match for a variety of baked goods. Braiding into challah or shaping in loaf pans is not recommended.

For challah rolls, use metal jumbo muffin tins. Oil the pans and your hands to create eight 5.5-ounce balls, ten 4.4-ounce balls or twelve 3.6-ounce balls. Place balls in prepared pans. Brush with egg and garnish with topping of choice. Allow to rise for 30 minutes, then bake at 350°F for 25-30 minutes.

For a braided look, use Kosher Cook Silicone Challah Molds. Spray molds with oil. With oiled hands form eight 5.5-ounce balls and place one in each mold. Allow to rise 30 minutes, then bake at 350°F for 25 minutes. Remove the rolls from the molds and place face up on a tray. Brush with egg, garnish as desired and bake an additional 10-15 minutes.

For bagels, oil hands and divide dough into eight 5.5-ounce balls. Place them on an oiled cookie sheet and flatten. Use a very small cookie cutter or even a bottle cap to create a whole in the center. Brush with egg and topping of choice. Allow to rise 30 minutes. Bake at 350°F for 25-30 minutes.

For individual pizzas, roll a 5.5-ounce ball of dough and flatten into a thin round circle. Partially bake at 350°F for 15 minutes. Top with sauce cheese and veggies of choice. Finish by baking an additional 10-15 minutes.

For kokosh cake or deli roll: Roll out ⅓ of the dough between two pieces of parchment paper to approximately an 11×18-inch rectangle. While rolling out the dough, hold the parchment in place as shown on the video. For kokosh, brush dough generously with palm shortening or coconut oil. Combine ¼ cup unsweetened cocoa with ½ cup of coconut sugar and sprinkle evenly on the dough. For deli roll, brush dough with combined 1 tbsp. mayonnaise and 2 tbsp. mustard and top with 10-12 slices of deli of choice. Using the parchment paper to help lift the corner of the dough, roll up jelly-roll style. Place roll on a cookie sheet. Wash with egg. Allow to rise 30 minutes, then bake at 350°F for 30-40 minutes.

For hot pretzels, garlic knots or garlic twists, oil hands and shape dough as desired. Allow to rise for 30 minutes. Bake at 350°F for 20-35 minutes. Baking time will vary based on size.
