You’d never guess these cookies are both grain and gluten-free—they’re soft, chewy, and totally taste like the real deal. Because I like to stick with unrefined ingredients, the original recipe uses coconut sugar, but if you’re going for that classic cookie-shop look and feel, there’s a white and brown sugar variation below.
Yield: 27-30 cookies
If you love peanut butter and it loves you back, you’ll be blown away by this healthier version. However, if peanuts don’t work for you, these cookies can be made with any nut butter, such as almond, cashew, or even a nut butter blend. (We don’t recommend Sun butter unless you don’t mind green cookies.) Remember to file away the non-peanut butter version for Pesach, too!

Inspired by an ever-popular Twix candy bar, these cookies capture the super-satisfying combination of a crumbly base topped with layers of salted caramel and sweet chocolate. As you might have guessed, they are made of anything but candy… but still taste a lot like the real thing! They also freeze beautifully, making them the perfect addition to your backup dessert stash.
