Greek Salad


Greek Dressing

  • ⅓ cup olive oil
  • 1½ Tbsp. fresh lemon juice
  • 1 Tbsp. red wine vinegar
  • 2 garlic cloves, minced
  • 1 tsp. dried oregano


  • 2 heads romaine lettuce, checked and torn into bite-size pieces
  • 3 large plum tomatoes, cut into chunks
  • ⅓ English cucumber, cut in chunks
  • 1 medium red onion, sliced into thin rings
  • ¾ cup Kalamata olives, sliced
  • ¾ cup crumbled feta cheese


Whisk dressing ingredients together until blended. Adjust seasoning to taste. Combine all salad ingredients except cheese in large bowl. Toss with dressing. Sprinkle with cheese and serve.

Yield: 4-6 servings
