Banana Coconut Mini Pancakes

Banana coconut pancakes (Yield 16 mini pancakes)
 2 very ripe bananas
 4 egg
 5 tbsp coconut flour
 ½ tsp baking soda
 ½ tsp vanilla
 Pinch of salt

Mash bananas until smooth add eggs and mix.

Add 4 tbsp of coconut flour followed by the rest of the ingredients. Mix well.

Let the batter sit and thicken for a few minutes.

Heat a frying pan of griddle to a low flame ( make sure it’s low these pancakes burn easily) Place 1.5 -2 tbsp of batter on the hot pan.

Cook until bubbles form and pancake can lift easily to flip.

Cook on the underside until cooked.

Repeat with the remaining batter.
