Grain and nut free pancakes

Ingredients:

Grain and nut free pancakes(Yield 14-16 pancakes)
 5 tbsp (39 grams) coconut flour
 1 tbsp honey ( adjust to taste)
 3 egg
 2 tbsp avocado oil
 6 tbsp milk of choice
 1 tsp vanilla
 1 tsp baking powder
 Pinch of salt

Directions:

Combine all wet ingredients.

Sift in baking powder and coconut flour.

Mix with a whisk or fork until smooth.

Allow batter to sit and thicken for at least 5 minutes.

Heat a frying pan or the griddle to a low flame ( make sure it’s low these pancakes burn easily) Place 1.5 -2 tbsp of batter on the hot pan.

Cook until bubbles form and pancake can lift easily to flip.

Cook on the underside until cooked.

Repeat with the remaining batter.
