Combine all wet ingredients.
Sift in baking powder and coconut flour.
Mix with a whisk or fork until smooth.
Allow batter to sit and thicken for at least 5 minutes.
Heat a frying pan or the griddle to a low flame ( make sure it’s low these pancakes burn easily) Place 1.5 -2 tbsp of batter on the hot pan.
Cook until bubbles form and pancake can lift easily to flip.
Cook on the underside until cooked.
Repeat with the remaining batter.
