Grain Free Mini Pancakes

 1 egg or flax egg (To make a flax egg: Mix 1 Tbsp golden ground flax meal with 3 Tbsp warm water; let it sit for 10 minutes before adding it to the mixture.)
 1 tbsp maple syrup or honey
 1 tsp vanilla extract
  cup almond milk
  cup Rorie’s Grain Free Flour
 ¼ tsp baking soda
 ¼ tsp ground cinnamon (optional)



Combine wet ingredients in a bowl. Sift the dry ingredients into the wet, mixing with a whisk or heat a frying pan or griddle; turn heat to low.


Place 1 tablespoon batter on the hot pan. Cook until bubbles form and the pancake can lift easily.


Flip pancakes; cook on the underside until done, usually less than 1 minute.


Repeat with remaining batter.
