Mocha Fudge Muffins

Ingredients:
2 cups Rories Grain Free Flour
1/4 Cup plus 1 Tbsp Rorie's Dutch Cocoa
¼ cup Coconut Sugar or Date Sugar
⅓ cup Raw Honey or Maple Syrup
½ tsp Baking Soda
⅓ cup Brewed Coffee
¼ cup Oil
4 Eggs
1 tsp Vanilla
Optional Crumb
½ cup Rorie's Grain Free Flour
1 tbsp Rorie's Light Raw Honey
1 tbsp Coconut Oil *avocado oil can be used only if using light raw honey.
Directions:

Preheat oven to 350. Line 12 muffin cups with paper liners.
Mix dry ingredients together

Mix wet ingredients in a second bowl

Add wet mixture to dry mixture, mix together to form a smooth batter

Fill each lined muffin cups 3/4 full

Prepare the crumb topping.
Combine crumb ingredients in a small bowl.
First mixing with a spoon then by hand to create a crumble

Top each muffin top with crumb topping

Bake for 22-25 minutes
These muffins freeze beautifully and can be defrosted at room temp. Muffins can be stored at room temp for 24 hours or in the fridge for up to 3 days.
