Yields 4-5 mini waffles

Ingredients:

 ½ cup shredded zucchini
 ½ cup shredded yellow squash
  cup Rories grain free flour
 2 eggs
 1 tbsp melted coconut oil
  tsp smoked paprika
  tsp turmeric
  tsp ground black pepper
 ½ tsp kosher salt

Directions:

Roll up the shredded squash in a kitchen towel or place into a mesh bag; squeeze over the sink to remove excess liquid. Transfer to a large bowl.

Add flour, eggs, oil, and seasonings. Stir to combine.

Preheat a waffle maker; add 1/4 cup batter; cook until done. Repeat with remaining batter.

Tip: Top waffles with guacamole for an extra boost of healthy fats.
